As I watched the kids on MasterChef Junior whip up layered cake this week, I realized I have never made a layer cake before. Say whaaattttt? When I think of layer cake, I think of the 6 layer cake challenge on season 2 of MasterChef where Ben Starr made his signature Pumpkin Carrot Cake with Cream Cheese Frosting & Candied Hazelnuts which blew the minds of Gordon, Graham, and Joe. Then my husband and I had a heated discussion of which is better-> pie or cake. He loves cake. I love pie…and cake…but pie is better. But not better than this cake. These are the things we debate about.

I have a to do list that’s a mile long which does NOT include making cake, but the fat kid inside me can’t resist.
Thank you Ben for this recipe and introducing me to the exotic spice, cardamom, which adds complex flavor to the cake and pairs well with the other warm spices, pumpkin, and carrots.
Instead of using candied hazelnuts, I used pecans….
